Can you change sink in the bathroom without cutting a copper pipes?

As long as the new unit going in is exactly the same size and pipe fitting specifications as the old one

Look under the sink and see, if it is not to old it might even have the braided flexible ends that you can remove without tools.

if the origanal taps line up to the new ones yes , it may be better to cut the pise 12 inches down and fit flexi pipe conectors
